On Saturday night we made a delicious Italian feast for dinner (rather I made, not we). It was both gorgeous to the eyes and to the taste buds. I love this type of cooking...
We had:
- A delicious tomato salad (tomatoes, chilis, and basil from our balcony) with fresh mozzarella
- Marinated artichokes
- Marinated semi-dried tomatoes
- Rolled anchovies with capers on lemon slices
- Roasted portobello mushrooms with garlic, fresh chili and parmesan
- 2 types of Italian sausages
- A delicious roasted vegetable, and olive warm salad. Eggplant, zucchini, bell peppers, and onions, smothered in homemade tomato sauce and garnished with large green olives.
- Large pasta shells drizzled with white truffle oil and parmesan
- And a home made pizza with anchovies
- oh and of course some Southern Italian red wine. yum!
