WIMGB: Semi-Tomato Salad


Grocery Edition!

Semi-Dried Heirloom Tomato Salad:

• Heirloom tomatoes in lots of gorgeous colors.
• Fresh Mozzarella
• Fresh herbs of choice (thyme, basil, oregano)
• Salt and Pepper
• Extra Virgin Olive Oil
• Red Wine Vinegar


Semi-Dried tomatoes are soooo insanely delicious I can't even put their deliciousness into words. Regular tomatoes become candy like in this super easy recipe.... all you need is time.

Pre heat oven to 100 degrees celsius. Cut tomatoes into perfect halves. Place them on baking sheet cut side up. Sprinkle with a little salt. Place in oven and bake at this low temperature until the tomatoes dry and look a bit wrinkled, but not burnt or completely dry. Open the oven every 15-30 minutes to release the moisture. Depending on size semi drying can take anywhere from 1 hour for cherry tomatoes to 8 hours for larger tomatoes.

Once the tomatoes are semi-dried combine them in a bowl with ripped pieces of fresh mozzarella (I think ripped is much more rustic/authentic looking than cut.) Add more salt as needed, as well as a bit of black pepper. Finish with a drizzling of red wine vinegar and extra virgin olive oil, to taste.

Serve luke warm with tomatoes direct from the oven or allow the tomatoes to cool and serve cold. Both are just as yummy. Enjoy!
