Pineapple Curry Pasta Salad

Look what I made the other day for a summery lunch! Super yummy curry pasta salad with pineapple chunks, mandarin orange slices, grilled chicken breast and bacon.

I made my own mayonnaise (because I'm crazy like that...) But it seriously takes so much better, much healthier since they aren't any weird E- additives, and it really is super easy to make.

Mayo:

1 egg
1 egg yolk
1 Tbsp Dijon Mustard
1 Tbsp vinegar
pinch salt

Mix together with an electric mixer in a small bowl (use just one of the whisk arms, much easier that way)

Then gradually add vegetable oil until the mixture thickens and becomes mayo. Add more mustard, salt or vinegar to taste.

Starting to be a food blog gosh. Hope you enjoy it though.
