Summer Melon Salad



With Summer comes lighter and fresher meals, as apposed to the heartier stews of Winter (just makes sense.) One summery salad the boyfriend and I make often in many different variations is a delicious fresh mozzarella salad with just about any fruit or vegetable. 

This time with melon...



Melon Mozzarella Salad:


1 honeydew or other sweet ripe melon. Cut into chunks.
1 or 2 balls of fresh mozzarella. Don't cut, just tear into chunks. (Looks more rustic and nonchalant)
Finely chopped red chili for desired heat. (Use how ever much you like)
Cilantro for garnish
Maldon flaked salt and a drizzle of olive oil

So delicious by it's self, as a starter or as a side dish to fish or chicken. 


A few delicious variations:

With tomatoes. Cut tomatoes into big chunks and salt generously (tomatoes + salt = best friends) Garnish with parsley or any herb you prefer.

With roasted red peppers. Roast red bell peppers in thick slices with seeds removed at 200 celsius (400 F) until soft and slightly blackened at the edges and on the skins. Delicious served luke warm with the mozzarella (the cheese starts to melt just slightly, yum!) Garnish with fresh thyme or oregano.

I can imagine these variations would also be delicious... roasted eggplant, thin strips of raw zucchini, ripe mango or grilled peaches.
