Chimichurri



Some majorly delicious food has been going on lately in our kitchen... especially this dish we had the other night. Chimichurri white bean salad with avocado and chipotle, smoked paprika rubbed flank steak. So amazingly delicious! Plus I think these are some of the most mouth watering and professional photos the boyfriend has ever taken. Gosh I wish there were left overs...




I have a major chimichurri addiction. It seriously tastes amazing with just about everything... with steak (duh!), as a potato salad dressing (or white bean salad dressing), with eggs, with fish, with chicken whatever. So delicious! Plus you can make it how ever you want to really (everyone is South American has their own recipe.)

Here is how I usually make mine though.


Chimichurri:


Fresh Parsley
Dried Oregano
Fresh Chili
Red Onion
Salt & Pepper
1/2 Olive Oil
1/2 Red Wine Vinegar

Chop super finely or mixed in food processor, then add oil and vinegar. Put on food, enjoy!
